Department of Food Science, Section for Food Microbiology, Gut Health and Fermentation invites applicants for a PhD fellowship in Bacillus-based fermentations for improved nutritional value of plant based food matrices. The project is part of the research project “PROFERMENT: Solid-state fermentations for protein transformations and palatability of plant-based foods”, which is financed by the Novo Nordisk Foundation.
Start date is (expected to be) 1 May 2024 or as soon as possible thereafter.
The project
The overall aim of PROFERMENT is to gain the fundamental knowledge that is needed for developing scalable whole-matrix plant fermentation approaches to transform plant-based materials into nutritious, savoury foods. PROFERMENT will exploit bacteria (Bacillus spp.) and moulds to enhance protein bioavailability and quality as well as palatability and textural properties of plant foods.
The advertised PhD-position will focus on different aspects of the use of Bacillus spp. for improving nutritional value while also ensuring safety of plant based food matrices. The project focus on enhancing protein bioavailability via Bacillus fermentations as well as Bacillus-mould co-fermentations). Furthermore, the project will investigate the possible formation of biogenic amines and othe potentially undesired compounds during these fermentations. The PhD-project will contain a strong wet-lab component, but the PhD-student is also expected to obtain strong bioinformatics skills during the project. The PhD-student will work closely together with several other PhDs and Post Docs also working on the project.
Who are we looking for?
We are looking for candidates within the field(s) of biology, food science, biotechnology or similar with good grades and English skills. Applicants can have a background from e.g. food microbiology, molecular biology, bioinformatics, physiology and genetics of Bacillus spp., plant based foods and/or solid stage food/feed fermentations.

It covers all disciplines of food science from raw materials to processing and consumption, and is organized in four sections, one of which is the section for “Food Microbiology, Gut Health and Fermentation”, where the position is placed. The use of microbes for enhancing the nutritional quality, flavor and safety of food via fermentation is a primary focus point for the section. You can undertake the PhD programme as a three year full-time study within the framework of the regular PhD programme (5+3 scheme), if you already have an education equivalent to a relevant Danish master’s degree.
Qualifications needed for the regular programme
To be eligible for the regular PhD programme, you must have completed a degree programme, equivalent to a Danish master’s degree (180 ECTS/3 FTE BSc + 120 ECTS/2 FTE MSc) related to the subject area of the project, e.g. biology, food science and biotechnology. Terms of employment in the regular programme
Employment as PhD fellow is full time and for maximum 3 years.
Employment is conditional upon your successful enrolment as a PhD student at the PhD School at the Faculty of SCIENCE, University of Copenhagen. This requires submission and acceptance of an application for the specific project formulated by the applicant.
The terms of employment and salary are in accordance to the agreement between the Ministry of Finance and The Danish Confederation of Professional Associations on Academics in the State (AC). The position is covered by the Protocol on Job Structure.
