We make high quality products to our 3 bakery stores, and to our restaurant partners across Copenhagen, and we are looking for an experienced and passioned Assistant Head Baker to join our production team at our bakery in Nordhavn, Copenhagen.
The team is composed of highly skilled and dedicated people with restaurant and bakery backgrounds which requires skills and experience within artisan bakery and pastry production alongside production and process excellence.
Job Overview
Primarily based at our bakery in Nordhavn, the Assistant Head Baker leads the Bread team to ensure consistency and continuous improvement on culture and optimizing processes in order to deliver the best possible products in a good and healthy work environment, cultivating innovation and great team spirit.

Job Overview
Primarily based at our bakery in Nordhavn, the Assistant Head Baker leads the Bread team to ensure consistency and continuous improvement on culture and optimizing processes in order to deliver the best possible products in a good and healthy work environment, cultivating innovation and great team spirit.
Production leadership
- Lead the Bread team – in a combination of being hands on, giving instructions, assessing, providing feedback and supporting the team.
- Plan and execute the daily production for both Bread and Pastry team
- Implement new products in our own stores.
- Ensure product quality and consistency
- Administrative tasks primarily withing ordering and scheduling
Talent Management & Learning
- Recruitment, onboarding and training to ensure a strong team (spirit) in the Bread team.
- 1:1 conversations – and other targeted development activities – in close cooperation with the Head Baker.
Professional Skills - our ideal Assistant Head Baker:
- A minimum of 5 years’ experience in a pastry/bakery production role
- A minimum of 2 years’ experience with operations management and people leadership)
- Demonstrable ability to liaise effectively and build communication channels with the production teams and the rest of the organisation.
- Ability to analyze KPI´s and other relevant key figures and use them proactively.
- Experience in driving improvement through a deep “hands-on” understanding of the production set up – and core business.
- English – written and spoken.

- Structured and agile at the same time, proactive driven individual who is comfortable operating at all levels, and at all times.
